Ships turn around when they leave docks. This causes annoying ship is lost warning messages when a dock is in a tight space like a canal or a neatly designed harbour. There is an option for allowing trains to reverse at station, we need that for ships too. It would make the game more realistic as in real life a ship would back out and turn around on open water.
FWIW, do you have 'Forbid trains and ships from making 90º turns' set to 'on'? That can cause poor ship routing behaviour on canals / rivers, and setting it to 'off' can mitigate problems with lost ships. I know it's not the feature you asked for, but might help.
Thanks. This is a nice suggestion. To control the ship movement would require state machines for docks (similar to airports). It's not currently a goal for OpenTTD to add state machines to docks.
Ships getting lost is usually solved by enabling 90 degree turns for ships.
